Ingredients
- Boneless skinless Chicken tenderloins
- 2 Red and yellow bell peppers cut into bite sized pieces
- 1 small red onion cut similar to peppers
- 1 pineapple or pre-chopped
- 2/3 cup BBQ sauce the best quality in my opinion is Stubbs
- 1 pkg white basmati rice I use 90 sec rice

Instructions
- Chop chicken in bite sized pieces. Heat 1 tbsp olive oil on medium-high heat and cook chicken 4-5 minutes flipping occasionally until cooked thoroughly.Add salt and pepper to chicken while cooking. Set aside chicken once done.
- Add peppers and onions and sauté for 3 minutes.
- Add pineapple chunks and sauté another 3 minutes.
- Add 4 oz of chicken to a mixing bowl and add veggies and pineapple and 1-3 tbsp of bbq sauce. Enough to cover everything. Mix well. Add 1/2 cup of rice to each container and top with chicken mixture.
