  1. In a small bowl beat eggs, heavy cream, and red pepper flakes together. Season generously with salt and pepper.
  2. In a nonstick skillet over medium heat, melt butter. Pour about 1/3 of the eggs into the skillet.
  3. Place a slice of cheese in the middle of the eggs in the skillet and let sit about 1 minute.
  4. Fold the sides of the egg into the middle, covering the cheese.
  5. Remove from the pan and repeat with remaining eggs.
  6. Serve eggs between two sausage patties with avocado.
