Chop chicken in bite sized pieces. Heat 1 tbsp olive oil on medium-high heat and cook chicken 4-5 minutes flipping occasionally until cooked thoroughly.Add salt and pepper to chicken while cooking. Set aside chicken once done.
Add 4 oz of chicken to a mixing bowl and add veggies and pineapple and 1-3 tbsp of bbq sauce. Enough to cover everything. Mix well. Add 1/2 cup of rice to each container and top with chicken mixture.
