Heat 1 Tbsp coconut oil in a large skillet over medium high heat. Add stew meat and cook until browned, then flip and brown on all sides. Transfer to slow cooker.
Place all of the ingredients in a slow-cooker and cook on low for 8-10 hours or high for 4-5 hours. Season with salt and pepper to taste before serving.
(Optional) Combine potato starch with a few tablespoons of cold water and stir into hot stew to thicken if desired.
