Instructions
  1. Add all chicken ingredients into a large zip lock bag and add in chicken breasts and massage well. Let marinate for at least 20 minutes up to 12 hours.
  2. Drain chicken from marinade and heat olive oil or spray in skillet over medium/high heat. Add chicken and cook approximately 3-4 minutes per side. Remove from pan and let cool.
  3. Once cool, cut into bite sized pieces (be sure it is cool first or all the juice will run out and be dry).
  4. Make cucumber salad by chunking cucumbers and tossing with lemon juice, olive oil, vinegar, garlic and oregano and set aside.
  5. Mix all ingredients for tzatziki sauce well and set in fridge to chill with cucumbers.
  6. Cook brown rice according to package and add ½ cup to each container with halved cherry tomatoes, and red onion slices. Top with chicken, cucumber salad, and sauce and serve cold.
