- 2 oz sliced whole grain bread toasted, these were 1 oz each
- 2 tbsp hummus
- 6 thin cucumber slices
- 1 small radish sliced thin
- 1 oz avocado sliced thin (from 1/4 small haas)
- crushed red pepper flakes to taste
- 1/8 tsp kosher salt
- black pepper to taste
- 1/4 cup baby arugula
- 1 wedge fresh lemon

Instructions
- Spread the toast with hummus, top with cucumber, radish and avocado, sprinkle crushed red pepper flakes, salt and black pepper. Top with arugula and lemon juice.
