Turkey Meatloaf with Cauliflower Mashed Potatoes
Leave out cheese if dairy free This is my spin on “comfort food” and a way to make your favorite food healthy. With this recipe just make 2 of the same for enough for everyone. The recipe is for one meatloaf.

Instructions
  1. Preheat oven to 400. Saute onion and peppers after diced. Mix all ingredients in a bowl with turkey. Spray a pan (a bread loaf pan works best) and place mixture evenly in pan. Bake 35 minutes. Take out and spoon out all the liquid from the pan. Top mixture with ¼ cup more ketchup and place back in oven for 25 minutes. .
  2. The fast version of this is to buy the frozen steamable bags of cauliflower and cook according to instructions on package. Once cooked add cauliflower to blender and add in 1 tbsp garlic powder, ½ tbsp of salt and pepper and 2 laughing cow cheese wedges (I like the light swiss and the white cheddar for this) per 1 bag of cauliflower. Add almond milk or milk of choice if mixture is dry. Do a tiny bit at a time to ensure it doesn’t become too thin.
