  1. Place rice and water in a saucepan over medium heat. Bring to a boil, then reduce heat to a low and simmer for about 45 minutes, or until rice is tender. While rice is cooking, brown the meat and onion in a deep nonstick skillet. Season with Cajun seasoning. Stir in beans, olives, vinegar, and chipotle powder. Mix well, cover and simmer for 20 minutes over medium-low heat. Add the cilantro during the last 5 minutes of cooking. Serve over rice.
