Ingredients
- 1 and 1/2 lbs beef stew meat cubed
- 1 tbsp coconut oil
- 1 medium yellow onion diced
- 2 medium potatoes diced
- 1 small parsnip peeled and cubed
- 2 medium carrots peeled and chopped
- 2 stalks celery diced
- 3 cloves garlic minced
- 2 cups green beans fresh or frozen
- 14 oz diced tomatoes canned; with the liquid
- 3-4 cups chicken or beef broth
- 2 tsp dried thyme
- 1/2 tsp dried rosemary lightly crushed
- salt and black pepper to taste
- 2 tbsp potato starch optional

Instructions
- Heat 1 Tbsp coconut oil in a large skillet over medium high heat. Add stew meat and cook until browned, then flip and brown on all sides. Transfer to slow cooker.
- Place all of the ingredients in a slow-cooker and cook on low for 8-10 hours or high for 4-5 hours. Season with salt and pepper to taste before serving.
- (Optional) Combine potato starch with a few tablespoons of cold water and stir into hot stew to thicken if desired.
