Instructions
  1. Heat 1 Tbsp coconut oil in a large skillet over medium high heat. Add stew meat and cook until browned, then flip and brown on all sides. Transfer to slow cooker.
  2. Place all of the ingredients in a slow-cooker and cook on low for 8-10 hours or high for 4-5 hours. Season with salt and pepper to taste before serving.
  3. (Optional) Combine potato starch with a few tablespoons of cold water and stir into hot stew to thicken if desired.
