Ingredients
Greek Chicken
- 2 pounds chicken breast
- 1 tbs Olive or coconut oil
- 3 tbs garlic minced
- 1/2 cup fresh lemon juice
- 1 tbs dried oregano
- 1/3 cup plain Greek yogurt I buy fage 0%- this brand has the least sugar
- salt and pepper to taste
Cucumber Salad
- 2 english cucumbers peeled and sliced
- 1/3 cup Lemon Juice
- 1 tbs olive oil
- 1 tbs red wine vinegar
- 1/2 tbs garlic minced
- 1/2 tsp dried oregano
Tzatziki Sauce
- 1 cup plain Greek yogurt
- 1 English cucumber finely chopped
- 1 tbs garlic minced
- 1/2 tbs dill weed
- 1.5 tsp Lemon Juice
- salt and pepper to taste

Instructions
- Add all chicken ingredients into a large zip lock bag and add in chicken breasts and massage well. Let marinate for at least 20 minutes up to 12 hours.
- Drain chicken from marinade and heat olive oil or spray in skillet over medium/high heat. Add chicken and cook approximately 3-4 minutes per side. Remove from pan and let cool.
- Once cool, cut into bite sized pieces (be sure it is cool first or all the juice will run out and be dry).
- Make cucumber salad by chunking cucumbers and tossing with lemon juice, olive oil, vinegar, garlic and oregano and set aside.
- Mix all ingredients for tzatziki sauce well and set in fridge to chill with cucumbers.
- Cook brown rice according to package and add ½ cup to each container with halved cherry tomatoes, and red onion slices. Top with chicken, cucumber salad, and sauce and serve cold.
